Thai Vegetable Curry Wraps or tortillas
Ingredients:
400g vegetables mixed
2Cloves garlic - Chopped
2 Tablespoons Thai Green Curry Paste
1cm Grated Root Ginger
1 Onion finely chopped
1 teaspoon curry powder mild
12 roughly chopped basil Leaves
1 Fresh stalk Lemon Grass
Juice of 1 lemon
1 Can Coconut Milk
2 tortillas/wraps
Salt and pepper for seasoning
100ml cooking oil
Method
- pre- heat a sauce pot and fry onions , garlic, ginger thai curry paste and fry for 3 minutes
- add lemon grass stalks and coconut milk
-add vegetables and simmer for about 10min
-add lemon juice, roughly chopped basil ,leaves and correct your seasoning and serve as desired,
For the wraps, grill the wrap 1min each side on medium heat, cut into half, make two cone shapes and spoon in the veges and serve
*Can be served with rice or pasta
