One of the spa rooms is elevated in tree the tree tops.

Pizza for lunch

During lunch guests prepare their own pizza. A big table is put with lots of toppings for the pizza. The chefs prepare the dough and the guests are given an opportunity to select toppings for themselves. It is their choice that actually excites them as they are spoiled with different toppings. The pizzas are done right in front of the guests. After selection of toppings the pizzas are put in a pizza oven that uses firewood. Pizza making in Chobe Chilwero lodge is quite unique because in most places if one orders a pizza it is prepared at the back without the guest seeing what will be happening and without the guests say on the amount and variety of toppings.

Try another recipe by Chef Phineas

Thai Vegetable Curry Wraps or tortillas
Ingredients:

400g vegetables  mixed
2Cloves garlic - Chopped
2 Tablespoons Thai Green Curry Paste
1cm Grated  Root Ginger
1 Onion finely chopped
1 teaspoon curry powder mild
12 roughly chopped  basil Leaves
1 Fresh stalk Lemon Grass
Juice of 1 lemon
1 Can Coconut Milk
2 tortillas/wraps
Salt and pepper for seasoning
100ml  cooking oil
Method
- pre- heat a sauce pot and fry onions , garlic, ginger thai curry paste and fry for 3 minutes
- add  lemon grass stalks and coconut milk
-add vegetables and simmer for about 10min
-add lemon juice, roughly chopped basil ,leaves and correct your seasoning and serve as desired,
For the wraps, grill the wrap 1min each side on medium heat, cut into half, make two cone shapes and spoon in the veges and serve
*Can be served with rice or pasta

Chocolate butterscotch cake by Chef Phinias Kuchicha at Chobe Chilwero lodge

Chocolate butterscotch cake

25g cocoa powder
250g butter, chopped
1 cup dark brown sugar
2 eggs
1 tablespoon golden syrup
1 ¼ cups self raising flour
½ cup milk

 Preheat oven to 160C.   Grease and line cake tin
Whisk all ingredients together and pour into tine.
Leave cake in pan to stand for 10 minutes
Bake for 1 hour, leave to cool

Mascarpone cream:
1 cup mascarpone cheese
300ml cream

Whisk together until soft peaks, do not over whisk or it will separate

Icing:
60g butter
½ cup dark brown sugar
¼ cup milk
1 ½ cups icing sugar
Heat butter, brown sugar and milk in saucepan.  Add icing sugar and stir until smooth.

Divide cake in three layers, spread with mascarpone cream and top with caramel icing.
